Get Quake 3... has some of the most insane airrockets I've ever seen. Definitely at about 2 or 3 minutes theres several sick frags.

Xep, the video I watched the most back in the day is probably Annihilation
Yet more recently this defrag movie has amazed me many times:

Annihilation is cool of course, but also awesome imo is Raidenized
The 4 p0wned movies are always fun, from back in the days of ctfpickup.euro (couldn't find them on youtube/google video)
Total Annihilation is nice as well.
And a couple of very pretty movies (not really fragbased but certainly very nicely edited) are The Badge v3 and the Requiem for Demos.ru server movie.
Last but not least: Tchouky's botted trick movie Deception is more than worth watching!!!

We will try and find someone with enough experience to make a descent fragmovie with frags coming from our pickups.

How could you forgot about "JUST QUAKE" which is probably the best compilation of known ownages by pro players. Also the best compilation of Q3 duel has to offer is in "Q3FUEL2".
Fragged by keep3r, fragged by mikes and fragged by b100.death are nice too.
Also WCG 2k2 Highlights is very nice.I also enjoy 3 movies by calux aka CLX from VSE clan.

Lyon Connection is one of my favourites as with most of those mentioned above.
back when I was in college I used to get all the new quake releases from own-age.com
Here is the list of users 'preferred' quake 3 flicks from the siteI remember watching them with awe, they have only spurred me on further... (not in terms of pulling off the most amazing shots but how it looks so easily and how they just focus on playing...)
